Want a new refreshing meal? This was our latest recipe we tried and loved it. It is definitely a nice summery type salad (or one that reminds you that summer is on it's way).
You will need:
2-1/2 cups uncooked bow tie pasta (or spiral noodles)
4 cups torn romaine lettuce
1 1/2 cups cubed cooked chicken
3/4 cup crumbled feta cheese
1/2 cup salad dressing (we used our homemade balsamic vinaigrette)
Cook pasta according to package directions; drain and rinse in cold water. In a large bowl combine pasta, romaine, chicken, and feta cheese. Drizzle with the dressing and toss to coat.
The recipe I followed said it yields 9 servings. Doug and I made this our main course instead of a side salad and there was still some left for lunch the next day.

- The title for our blog came from the saying "thinking outside the box", which means to think differently, unconventionally or from a new perspective. "Enjoy your choices and enjoy what you do. Never let a day go by without being thankful for the fact that you get to be here in the first place." Hopefully this blog will help family and friends to stay a little closer to us even though were thousands of miles apart; as well as to share in our trials, daily life adventures and traveling experiences.
